Forget videotaping - why not get a high-res shot of this?
Do the Steelers need to cheat? Want to cheat? Of course not.
But it seems that coaches attempting to be cagey by covering their mouths while they make a playcall over their headsets usually do the covering with their playsheet. These days it's a nifty color-coded spreadsheet and while it's a bit fuzzy we can see things on Whiz's sheet like 3/4 Hole Weak and Pass Inventory.
In this age of high-res, long-lens photography it seems an almost irresistible temptation to capture a snap of these documents. Granted, things change from game to game but there have to be some situational constants that would be far too time-consuming to change every week.

but does that sheet just list things like "red razor z tiger blast 45 double flank"? stuff that we wouldn't know what it means?

I think our team has more class than that. The Chief would roll over in his grave...

I'm not advocating it, mind, but my guess is the vast majority of items traveled with Whiz from PA to AZ.

How would a list of plays help us? We already have all their plays simply by watching film.
What the Patriots were able to do was steal signals so they knew what a defense was going to run prior to the play.
